Ingredients

1 lb Brussels sprouts, trimmed and halved

3 tablespoons olive oil

4 cloves garlic, minced

½ teaspoon sea salt

¼ teaspoon black pepper

½ teaspoon smoked paprika

½ cup grated Parmesan cheese

2 tablespoons balsamic vinegar (optional)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

Prepare Brussels Sprouts: In a large bowl, combine the halved Brussels sprouts with olive oil, minced garlic, sea salt, black pepper, and smoked paprika. Toss well to ensure the sprouts are evenly coated.

Roast the Sprouts: Spread the Brussels sprouts in a single layer on the prepared baking sheet, cut side down. This will help them get crispy. Roast in the preheated oven for about 20-25 minutes, flipping halfway through, until they are golden brown and crispy.

Add Parmesan: Remove the Brussels sprouts from the oven and immediately sprinkle them with grated Parmesan cheese while they are still hot. Toss gently to combine, allowing the cheese to melt and adhere to the sprouts.

Finishing Touches: If using balsamic vinegar, drizzle it over the Brussels sprouts and toss lightly. This adds a wonderful tangy flavor.

Garnish and Serve: Transfer the crispy Brussels sprouts to a serving dish and garnish with chopped fresh parsley. Serve warm as a side dish or snack.
