Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

1 cup breadcrumbs (panko for extra crunch)

2 large eggs

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper to taste

1/2 cup unsalted butter

4 cloves garlic, minced

1 tbsp fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prepare the Chicken: Start by seasoning the chicken pieces with salt, pepper, garlic powder, onion powder, and smoked paprika. Toss to coat evenly and set aside.

Set Up Breading Station: In three separate bowls, place the flour in one, beat the eggs in another, and add the breadcrumbs in the third.

Bread the Chicken: Dip each piece of seasoned chicken into the flour, shaking off any excess. Next, dip it into the beaten eggs, allowing any excess to drip off, and finally coat it in the breadcrumbs, pressing lightly to adhere.

Cook the Chicken: Heat 1/2 cup of butter in a large skillet over medium heat. Once the butter is melted and bubbling, add the breaded chicken bites in batches to avoid overcrowding the pan. Cook for about 5-7 minutes, turning occasionally until they are golden brown and crispy. Remove them and place them on a paper towel-lined plate to absorb excess oil.

Make Garlic Butter Sauce: In the same skillet, add the minced garlic to the remaining butter and sauté for 1-2 minutes, just until fragrant (do not burn the garlic!).

Combine and Serve: Return the crispy chicken bites to the skillet with the garlic butter, tossing gently to coat them in the sauce. Remove from heat and sprinkle with fresh parsley.

Plate and Enjoy: Serve warm with lemon wedges on the side for an extra zing. These bites pair perfectly with a dipping sauce of your choice!
