Ingredients

For the Fish:

1 lb white fish fillets (like cod, tilapia, or haddock)

1 cup all-purpose flour

1 cup panko bread crumbs

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1 tsp ground cumin

Salt and pepper to taste

1 large egg

1 cup buttermilk

Vegetable oil for frying

For the Mango Salsa:

1 ripe mango, diced

1/2 red onion, finely chopped

1 small jalapeño, seeds removed and minced

Juice of 1 lime

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

For Serving:

8 small corn or flour tortillas

1 cup shredded cabbage

Lime wedges

Instructions

Prepare the Fish:

    - In a shallow bowl, combine flour, garlic powder, onion powder, smoked paprika, cumin, salt, and pepper. Mix well.

      - In another bowl, whisk together the egg and buttermilk until well combined.

        - Dip each fish fillet first into the flour mixture, then into the egg mixture, and finally coat with panko bread crumbs. Make sure each piece is well-covered. Set aside.

          Make the Mango Salsa:

            - In a medium bowl, combine the diced mango, chopped red onion, minced jalapeño, lime juice, and cilantro. Season with salt and pepper to taste. Set aside to let the flavors meld.

              Fry the Fish:

                - In a large skillet, heat about 1 inch of vegetable oil over medium-high heat until shimmering.

                  - Carefully add the breaded fish fillets to the hot oil in batches, without overcrowding the pan. Fry for about 3-4 minutes on each side or until golden brown and cooked through. Use a slotted spoon to transfer the fish to a paper towel-lined plate to drain excess oil.

                    Warm the Tortillas:

                      - In a separate pan or on the grill, warm the tortillas for about 30 seconds on each side until they are pliable.

                        Assemble the Tacos:

                          - On each tortilla, place a few pieces of crispy fish, a handful of shredded cabbage, and a generous scoop of mango salsa. Squeeze a lime wedge on top for added brightness.

                            Serve:

                              - Serve the tacos warm with extra lime wedges on the side for squeezing. Enjoy your deliciously crispy fish tacos with vibrant mango salsa!
