Ingredients

2 pounds of chicken wings

1 tablespoon baking powder (not baking soda)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (optional for heat)

½ cup ranch seasoning mix (store-bought or homemade)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with aluminum foil and place a wire rack on top. This will allow for even cooking and crispiness.

Prepare the Wings: Rinse the chicken wings under cold water and pat them dry with paper towels thoroughly. Removing excess moisture is key for achieving crispiness.

Seasoning Mix: In a large bowl, combine the baking powder, garlic powder, onion powder, smoked paprika, dried oregano, dried thyme, salt, black pepper, and cayenne pepper (if using). Mix well to create a dry rub.

Coat the Wings: Add the chicken wings to the bowl and toss them in the seasoning mixture until they are evenly coated. Make sure each wing is well-covered for maximum flavor.

Arrange on Rack: Place the wings in a single layer on the wire rack, ensuring they are not touching each other. This helps them to crisp up nicely.

Bake: Bake the wings in the preheated oven for 40-45 minutes, turning them halfway through. As they bake, the baking powder will help render the fat, making the skin crispy.

Add Ranch Flavor: Once the wings are golden brown and crispy, remove them from the oven. Immediately sprinkle the ranch seasoning mix over the hot wings and toss to coat.

Broil (Optional): For an extra crispy finish, you can broil the wings on high for an additional 2-3 minutes. Watch closely to avoid burning.

Garnish and Serve: Transfer the wings to a serving platter, garnish with chopped fresh parsley, and serve hot with your favorite dipping sauces, like ranch or blue cheese.
