Ingredients

2 ripe avocados

1 cup panko breadcrumbs

½ cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon sea salt

¼ teaspoon black pepper

Olive oil spray (or cooking spray)

Optional: Parmesan cheese, for extra flavor

Optional: Dipping sauce (e.g., ranch, sriracha mayonnaise)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easier cleanup.

Prepare the Avocados: Cut the avocados in half and carefully remove the pit. Slice each half into wedges or fries, and gently scoop them out of the skin.

Set Up the Breading Station: In three separate shallow bowls, place the flour in the first bowl, the beaten eggs in the second bowl, and the panko breadcrumbs mixed with garlic powder, onion powder, smoked paprika, sea salt, and black pepper in the third bowl.

Bread the Avocado Fries: Take each avocado fry and dip it first into the flour, shaking off any excess. Then, dip it into the beaten eggs, allowing any extra to drip off. Finally, coat it in the panko breadcrumb mixture. Ensure the fries are evenly coated for maximum crispiness. Repeat until all avocado fries are breaded.

Arrange on Baking Sheet: Place the breaded avocado fries in a single layer on the prepared baking sheet. For extra crispiness, lightly spray the tops with olive oil spray.

Bake: Bake the avocado fries in the preheated oven for 15-20 minutes, or until golden brown and crispy. Keep an eye on them to prevent burning.

Serve: Once done, remove from the oven and let cool for a few minutes. Serve warm with your favorite dipping sauce and enjoy the crispy, creamy goodness!
