Creamy Tuscan Ravioli Soup

Ingredients
  

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 teaspoon dried Italian seasoning

1/2 teaspoon crushed red pepper flakes (optional)

6 cups vegetable or chicken broth

1 (10 oz) package of fresh or frozen cheese ravioli

1 cup heavy cream

1 cup fresh spinach, chopped

1/2 cup sun-dried tomatoes, chopped

Salt and pepper, to taste

Grated Parmesan cheese, for serving

Fresh basil leaves, for garnish

Instructions
 

Sauté the Base: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Cook for about 5-7 minutes, until the vegetables are softened and the onion is translucent.

    Add Garlic and Seasoning: Stir in the minced garlic, dried Italian seasoning, and crushed red pepper flakes (if using). Sauté for an additional 1-2 minutes until fragrant.

      Simmer the Broth: Pour in the vegetable or chicken broth, scraping any bits off the bottom of the pot. Bring to a boil and then reduce to a simmer.

        Cook the Ravioli: Add the ravioli to the pot and cook according to package directions, usually about 5-7 minutes for fresh ravioli. If using frozen, it may take a couple of minutes longer.

          Make it Creamy: Once the ravioli is cooked, stir in the heavy cream, chopped spinach, and sun-dried tomatoes. Let the soup simmer for another 3-5 minutes, just until the spinach wilts.

            Season: Taste the soup and add salt and pepper as needed. Adjust any seasoning to your liking.

              Serve: Ladle the soup into bowls, sprinkle with grated Parmesan cheese, and garnish with fresh basil leaves for a flavor boost.
