Ingredients

1 cup orzo pasta

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 can (14 oz) crushed tomatoes

2 cups vegetable broth

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional)

1 cup heavy cream

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

Add Tomatoes and Spices: Pour in the crushed tomatoes, vegetable broth, dried basil, oregano, and red pepper flakes (if using). Bring the mixture to a simmer, season with salt and pepper, and let it cook for about 5 minutes.

Cook the Orzo: Add the orzo to the skillet, stirring well to combine it with the tomato mixture. Cover and cook for 8-10 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the liquid.

Stir in Cream and Cheese: Lower the heat to a gentle simmer, then stir in the heavy cream and the grated Parmesan cheese. Continue to cook for another 2-3 minutes, allowing the sauce to thicken slightly. Adjust the seasoning with more salt and pepper if needed.

Serve and Garnish: Remove from heat and let it sit for a minute. Serve the creamy tomato orzo warm, garnished with fresh basil leaves and an extra sprinkle of Parmesan cheese.
