Ingredients

1 cup orzo pasta

2 cups vegetable broth

1 cup heavy cream

1/2 cup sun-dried tomatoes (packed in oil, drained and chopped)

1/2 cup grated Parmesan cheese

2 cloves garlic (minced)

1 medium onion (finely chopped)

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves (for garnish)

Instructions

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent and fragrant, about 4-5 minutes.

Cook the Orzo: Add the orzo to the skillet, stirring it into the mixture for about 2 minutes. This will help to toast the orzo slightly, enhancing its flavor.

Add the Liquids: Pour in the vegetable broth and bring it to a gentle boil. Once boiling, reduce the heat to low and cover the skillet, letting it simmer for about 10-12 minutes, or until the orzo is cooked al dente and has absorbed most of the broth.

Create the Creamy Sauce: Stir in the heavy cream, Italian seasoning, chopped sun-dried tomatoes, and grated Parmesan cheese. Mix well until the cheese has melted and the sauce is creamy. Season with salt and pepper to taste.

Garnish and Serve: Remove from heat and let it rest for a couple of minutes. Serve the orzo warm, topped with fresh basil leaves for a burst of color and flavor.
