Ingredients

1 pound fresh or frozen gnocchi

2 cups fresh corn kernels (about 4 ears of corn)

1 cup heavy cream

1 tablespoon olive oil

3 tablespoons unsalted butter

2 cloves garlic, minced

1 medium shallot, finely chopped

1 teaspoon fresh thyme leaves

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper (adjust to taste)

½ cup grated Parmesan cheese

Fresh basil leaves for garnish

Instructions

Cook the Gnocchi: In a large pot, bring salted water to a boil. Add the gnocchi and cook according to package instructions or until they float to the surface (about 2-3 minutes). Drain and set aside.

Prep the Corn: If using fresh corn, carefully cut the kernels off the cob and set aside. If using frozen, you can use them directly.

Sauté Aromatics: In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the minced garlic and chopped shallot, sautéing for about 2 minutes until the shallots become translucent and fragrant.

Add Corn: Stir in the corn kernels, and cook for about 5-7 minutes until they are tender, stirring occasionally.

Make the Cream Sauce: Lower the heat and add the heavy cream and thyme to the skillet, stirring well to combine. Allow the mixture to simmer gently for about 3-4 minutes, or until the sauce thickens slightly.

Combine Ingredients: Add the cooked gnocchi to the skillet and gently toss to coat them evenly with the creamy corn sauce. Stir in the remaining 2 tablespoons of butter, Parmesan cheese, salt, and pepper. Cook for an additional 2 minutes, allowing the flavors to meld.

Serve: Divide the creamy corn gnocchi among serving plates. Garnish with fresh basil leaves and additional Parmesan cheese if desired. Enjoy warm!
