1 cup Arborio rice

4 cups vegetable broth

1 cup fresh or frozen peas

1 medium onion, finely chopped

2 cloves garlic, minced

1/2 cup dry white wine (optional)

1/2 cup grated Parmesan cheese

1/4 cup heavy cream

2 tablespoons olive oil

2 tablespoons unsalted butter

Salt and pepper to taste

Fresh mint leaves, for garnish

Zest of 1 lemon

Prepare the Broth: In a saucepan, bring the vegetable broth to a simmer over medium heat. Keep it warm throughout the cooking process.

    Sauté Aromatics: In a large skillet or saucepan, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until it's translucent, about 3-4 minutes. Then, add the minced garlic and cook for another minute until fragrant.

      Toast the Rice: Stir in the Arborio rice, coating it in the onion and garlic mixture. Cook for about 2 minutes until the rice is slightly translucent around the edges.

        Deglaze with Wine: If using, pour in the white wine and stir frequently, allowing the rice to absorb the liquid. This step adds flavor and a nice depth to the risotto. Once the wine is mostly absorbed, it’s time to add the broth.

          Add Broth Gradually: Begin adding the warm vegetable broth, one ladle at a time. Stir continuously until the liquid is mostly absorbed before adding the next ladle. Repeat this process until the rice is creamy and al dente, about 18-20 minutes.

            Incorporate Peas: When the rice is almost done, add the peas to the risotto, stirring to combine and cooking for an additional 2-3 minutes until heated through and bright green.

              Finish the Risotto: Remove the pan from the heat and stir in the remaining tablespoon of butter, grated Parmesan cheese, and heavy cream. Add salt, pepper, and lemon zest to taste. Mix until everything is combined and creamy.
