My first experience with Cheesy Spinach Tortellini Delight was on one of those dreary, rainy Sundays when the sky was overcast and the world outside felt a bit gray. As I prepared this dish, the kitchen transformed into a sanctuary filled with warmth and the tantalizing scent of melting cheese and sautéed garlic.

Creamy Spinach Tortellini Bake

12 oz cheese-filled tortellini (fresh or frozen)

3 cups fresh spinach, roughly chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded (plus extra for topping)

1/2 cup grated Parmesan cheese

2 cups marinara sauce (homemade or store-bought)

1/2 cup heavy cream

2 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper, to taste

Olive oil, for sautéing

Fresh basil, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.

    Cook the Tortellini: In a large pot of salted boiling water, cook the tortellini according to package instructions until al dente. Drain and set aside.

      Sauté the Spinach: In a skillet over medium heat, add a drizzle of olive oil. Once hot, add minced garlic and sauté for about 1 minute until fragrant. Add the chopped spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper, then remove from heat.

        Prepare the Cheese Mixture: In a large mixing bowl, combine ricotta cheese, mozzarella cheese (reserve some for topping), grated Parmesan, Italian seasoning, heavy cream, and season with salt and pepper. Mix until smooth.

          Combine Ingredients: Add the cooked tortellini and sautéed spinach to the cheese mixture. Gently fold until everything is evenly coated.

            Layer the Dish: Pour half of the marinara sauce into the bottom of the greased baking dish. Spoon the tortellini and spinach mixture on top, spreading it evenly. Pour the remaining marinara sauce over the top, followed by a sprinkle of extra mozzarella cheese.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

                Serve: Once baked, remove from the oven and let it sit for a few minutes. Garnish with fresh basil if desired, then serve warm.
