Creamy Spinach Artichoke Quesadillas

1 cup fresh spinach, chopped

1 cup canned artichoke hearts, drained and chopped

1 cup cream cheese, softened

1/2 cup sour cream

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon lemon juice

Salt and pepper to taste

4 large flour tortillas

2 tablespoons olive oil (for cooking)

Optional: Fresh parsley for garnish

Instructions
 

In a medium bowl, combine the cream cheese and sour cream until well blended and creamy.

    Stir in the chopped spinach, artichoke hearts, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, lemon juice, salt, and pepper. Mix until all ingredients are evenly incorporated.

      Heat a large skillet over medium heat and add 1 tablespoon of olive oil.

        Place one tortilla in the skillet and spread half of the spinach-artichoke mixture onto one half of the tortilla. Fold the tortilla over to cover the filling.

          Cook for 3-4 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese is melted.

            Remove the quesadilla from the skillet and repeat the process with the remaining ingredients to make another quesadilla.

              Slice each quesadilla into wedges and serve warm, garnished with fresh parsley if desired.
