Creamy Spinach and Mushroom Pasta

8 oz (225g) pasta of choice (fettuccine, penne, or linguine)

2 tablespoons olive oil

1 small onion, finely chopped

3 garlic cloves, minced

8 oz (225g) mushrooms, sliced (button or cremini)

5 oz (140g) fresh spinach, washed and roughly chopped

1 cup (240ml) heavy cream

½ cup (50g) grated Parmesan cheese, plus more for serving

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

½ teaspoon nutmeg (optional)

1 tablespoon fresh lemon juice

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Cook Mushrooms: Add the sliced mushrooms to the skillet. Sauté until the mushrooms are tender and released their moisture, about 5-7 minutes.

        Add Spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes.

          Make the Cream Sauce: Reduce the heat to low and pour in the heavy cream. Stir well to combine, then add the grated Parmesan cheese, salt, black pepper, and nutmeg (if using). Cook, stirring occasionally, until the sauce is thickened slightly, about 3-4 minutes.

            Combine Pasta and Sauce: Add the cooked pasta to the skillet along with the reserved pasta water, and toss everything together until the pasta is well coated in the creamy sauce. Adjust seasoning to taste.

              Finish and Serve: Remove from heat and stir in the fresh lemon juice. Transfer to serving plates and garnish with fresh parsley and extra Parmesan cheese, if desired.
