Ingredients

8 ounces rotini pasta

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 can (10 oz) diced tomatoes with green chilies (Rotel)

1 cup heavy cream

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper to taste

¼ cup fresh cilantro, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside.

Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spoon (approximately 5-7 minutes). Drain excess fat if necessary.

Sauté Vegetables: Add the diced onion and minced garlic to the skillet with the beef. Sauté for 3-4 minutes until the onion is translucent.

Add Rotel and Spices: Stir in the can of diced tomatoes with green chilies, chili powder, cumin, smoked paprika, salt, and pepper. Let this mixture simmer for about 5 minutes to blend the flavors.

Create the Creamy Base: Pour in the heavy cream, stirring to combine. Allow it to heat through for about 2-3 minutes.

Incorporate the Cheese: Gradually add the shredded cheddar and Monterey Jack cheeses into the skillet, stirring until completely melted and the sauce is creamy.

Combine Pasta and Sauce: Add the cooked rotini pasta to the skillet. Toss everything together until the pasta is well-coated with the creamy cheese sauce.

Serve: Remove from heat and garnish with fresh chopped cilantro. Serve warm and enjoy your flavorful creamy Rotel pasta!
