1 lb (450g) potato gnocchi

1 head of garlic

2 cups cherry tomatoes, halved

1 tablespoon olive oil

Salt and pepper to taste

1 cup heavy cream

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 cup grated Parmesan cheese, plus extra for serving

Fresh basil leaves for garnish

Preheat the oven: Preheat your oven to 400°F (200°C).

    Roast the garlic: Cut the top off the head of garlic to expose the cloves. Drizzle with olive oil, wrap in aluminum foil, and roast in the oven for 30-35 minutes until soft and golden.

      Prepare the tomatoes: While the garlic is roasting, spread the halved cherry tomatoes on a baking sheet. Drizzle with olive oil, and season with salt and pepper. Roast in the oven (you can do this alongside garlic) for 20-25 minutes until blistered and tender.

        Cook the gnocchi: In a large pot of boiling salted water, cook the gnocchi according to package instructions until they float to the top (about 2-3 minutes). Drain and set aside.

          Make the creamy sauce: In a large skillet over medium heat, squeeze the roasted garlic cloves out of their skins into the pan. Add the heavy cream, dried basil, oregano, salt, and pepper. Stir well and let it simmer for 5 minutes.

            Combine ingredients: Add the roasted tomatoes and cooked gnocchi to the creamy sauce. Stir gently to combine, allowing the gnocchi to absorb the flavors for another 2-3 minutes.

              Finish with cheese: Stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning with salt and pepper as needed.
