Creamy Potato Puffs with Cheese Delight

2 large russet potatoes

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1/4 cup sour cream

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

2 tablespoons fresh chives, chopped

1 cup breadcrumbs

1/4 cup all-purpose flour

2 large eggs, beaten

Prepare the potatoes: Peel the russet potatoes and cut them into chunks. Boil them in salted water until tender, about 15-20 minutes. Drain and let them cool slightly.

    Mash the potatoes: In a mixing bowl, mash the boiled potatoes until smooth. Add cream cheese, sour cream, garlic powder, onion powder, salt, and pepper. Mix well until combined.

      Add cheese and chives: Gently fold in the shredded cheddar cheese and chopped chives into the potato mixture until evenly distributed.

        Shape the puffs: Scoop about 2 tablespoons of the potato mixture and shape it into a ball. Repeat until the mixture is used up.

          Prepare for frying: Set up a breading station: place the flour in one shallow dish, the beaten eggs in another, and the breadcrumbs in a third. Roll each potato ball in flour, dip it in egg, and finally coat it in breadcrumbs.

            Fry the puffs: Heat oil in a deep skillet or fryer over medium heat. Once hot, carefully place a few potato puffs in the oil, making sure not to overcrowd the skillet. Fry until golden brown, about 3-4 minutes per side. Remove and place on paper towels to drain excess oil.
