1 pound ground beef (or turkey)

4 large potatoes, diced (about 5 cups)

1 medium onion, chopped

3 cloves garlic, minced

4 cups beef broth

2 cups milk or heavy cream

1 cup shredded cheddar cheese

1 cup frozen corn (optional)

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley or chives for garnish

Brown the Meat: In a skillet over medium heat, add the olive oil. Once hot, add the ground beef (or turkey) and cook until browned, breaking it up with a spatula. Drain excess fat and set aside.

    Prepare the Vegetables: In the crockpot, layer the diced potatoes, chopped onion, minced garlic, and frozen corn (if using). Stir to combine.

      Add the Broth and Seasonings: Pour in the beef broth and add the dried thyme, paprika, salt, and pepper. Stir well to ensure all ingredients are evenly distributed.

        Combine the Meats: Add the browned meat to the crockpot and stir again to mix all ingredients.

          Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.

            Finish with Creaminess: About 30 minutes before serving, stir in the milk (or heavy cream) and shredded cheddar cheese. Mix until the cheese melts and the soup is creamy.
