1 pound Italian sausage (mild or spicy, your choice), casings removed

1 medium onion, diced

2 cloves garlic, minced

4 cups chicken broth

1 can (14.5 oz) diced tomatoes, undrained

1 cup ditalini pasta

1 cup heavy cream

1 cup grated Parmesan cheese

2 cups fresh spinach, roughly chopped

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

Olive oil for sautéing

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Sauté the Sausage: In a large pot, heat a splash of olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
