Ingredients

4 medium zucchinis (zoodles)

2 tablespoons olive oil

1 cup mushrooms (sliced, any variety)

3 cloves garlic (minced)

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper (or to taste)

Fresh parsley (chopped, for garnish)

Optional: Red pepper flakes (for a bit of heat)

Instructions

Prepare the Zoodles: Use a spiralizer to turn the zucchinis into zoodles. If you prefer, you can also use a julienne peeler. Set aside.

Cook the Mushrooms: In a large skillet, heat olive oil over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes until they release their moisture and become golden. Stir occasionally.

Add Garlic: Once the mushrooms are cooked, add the minced garlic to the skillet. Sauté for an additional 1-2 minutes until fragrant.

Make the Alfredo Sauce: Lower the heat and pour in the heavy cream, stirring constantly. Slowly add the grated Parmesan cheese and mix until melted and creamy. Add the Italian seasoning, salt, and black pepper. Adjust the seasoning to taste.

Combine: Add the zoodles into the skillet, tossing them gently in the creamy mushroom sauce. Cook for an additional 2-3 minutes until the zoodles are tender but still firm (al dente).

Garnish and Serve: Remove from heat and garnish with chopped fresh parsley and a sprinkle of red pepper flakes if desired. Serve immediately for a delicious and healthy meal!
