Ingredients

4 cups fresh or frozen sweet corn (about 4 ears, if fresh)

1 large onion, diced

2 medium potatoes, peeled and diced

2-3 jalapeños, finely chopped (adjust to taste)

4 cups vegetable broth

1 cup heavy cream

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Prepare the Base: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and chopped jalapeños, cooking for another 2-3 minutes until fragrant.

Add Vegetables: Stir in the diced potatoes and corn, mixing well with the onion mixture. Allow the veggies to cook for an additional 3-4 minutes, stirring occasionally.

Pour in the Broth: Add the vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook uncovered for about 15-20 minutes, or until the potatoes are tender.

Blend and Creamify: Once the potatoes are soft, use an immersion blender to blend the chowder until it reaches your desired consistency. You can blend it completely smooth or leave some chunks for texture. If using a regular blender, allow the mixture to cool slightly before blending in batches.

Season and Enrich: Return the blended mixture (if using a traditional blender) to the pot. Stir in the heavy cream and smoked paprika. Heat through on medium-low, stirring occasionally. Season with salt and pepper to taste.

Serve: Ladle the chowder into bowls, garnishing with fresh cilantro and a squeeze of lime juice for extra brightness. Serve hot, with lime wedges on the side for those who want to enhance the flavor even further.
