Creamy & Delicious Potato Soup

4 medium russet potatoes, peeled and diced

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

1/2 cup milk (or more for desired consistency)

3 tablespoons unsalted butter

1 teaspoon dried thyme

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1/4 cup chopped fresh chives or green onions, for garnish

Optional: crispy bacon bits for topping

Instructions
 

Sauté Vegetables: In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes. Add the minced garlic and cook for another minute until fragrant.

    Cook Potatoes: Add the diced potatoes to the pot and pour in the vegetable broth. Stir in the dried thyme, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.

      Blend the Soup: Once the potatoes are cooked, use an immersion blender to blend the soup until it reaches your desired level of creaminess. Alternatively, you can transfer batches of the soup to a blender. Be cautious with hot liquids!

        Add Creaminess: Stir in the heavy cream and milk to the blended soup. Adjust the seasoning with more salt and pepper, to taste. If the soup is too thick, add more milk until it reaches your desired consistency.

          Final Touches: Allow the soup to simmer gently for an additional 5 minutes. Serve hot, garnished with chopped chives or green onions, and if desired, crispy bacon bits.
