Creamy Corn & Pesto Pasta

8 oz (225g) pasta of your choice (linguine or fettuccine works great)

1 cup fresh or frozen corn kernels

1 cup heavy cream

½ cup homemade or store-bought basil pesto

2 tablespoons olive oil

3 cloves garlic, minced

Salt and pepper to taste

½ cup grated Parmesan cheese

Fresh basil leaves for garnish

Optional: a pinch of red pepper flakes for heat

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve about ½ cup of pasta water, then drain the pasta and set it aside.

    Sauté Garlic and Corn: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the corn kernels and cook for an additional 3-4 minutes until they are tender and slightly caramelized.

      Create the Creamy Sauce: Reduce the heat to low and pour in the heavy cream. Stir well to combine with the corn and garlic, allowing it to simmer for 2-3 minutes until the cream thickens slightly.

        Combine Pesto: Stir in the basil pesto, mixing until everything is well combined. If the sauce seems too thick, gradually add a little of the reserved pasta water until you reach your desired consistency.

          Toss Pasta: Add the drained pasta to the skillet, tossing it in the creamy corn and pesto mixture until evenly coated. If desired, sprinkle in the grated Parmesan cheese and mix until melted and incorporated. Season with salt, pepper, and optional red pepper flakes to taste.

            Serve: Remove from heat and garnish with fresh basil leaves. Serve hot with additional Parmesan cheese on the side.
