Creamy Chicken and Mushroom Stroganoff

1 lb (450g) boneless, skinless chicken thighs, sliced into strips

8 oz (225g) fresh mushrooms, sliced (white or cremini)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

2 tablespoons Dijon mustard

1 tablespoon Worcestershire sauce

2 tablespoons olive oil

2 tablespoons unsalted butter

1 teaspoon smoked paprika

Salt and pepper, to taste

3 cups cooked egg noodles or rice, for serving

Fresh parsley, chopped, for garnish

Instructions
 

Prep the Chicken: Season the chicken strips with salt, pepper, and smoked paprika.

    Sauté the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add the remaining tablespoon of olive oil and 2 tablespoons of butter. Once the butter has melted, add the chopped onion and sauté until translucent, about 3 minutes. Add the garlic and mushrooms, cooking until the mushrooms are browned and tender, about 5-6 minutes.

        Create the Sauce: Stir in the chicken broth, Dijon mustard, and Worcestershire sauce. Bring the mixture to a simmer, scraping the bottom of the skillet to loosen any bits stuck to the pan.

          Add Cream: Once simmering, reduce the heat to low and stir in the heavy cream. Allow it to gently simmer for an additional 5 minutes until the sauce thickens slightly.

            Combine Ingredients: Return the cooked chicken to the skillet, stirring to coat with the creamy sauce. Cook for another 3-4 minutes on low heat to combine flavors.

              Serve: Serve the creamy chicken and mushroom stroganoff over cooked egg noodles or rice. Garnish with fresh chopped parsley.
