1 medium head of cauliflower, chopped into florets

1 large onion, diced

3 cloves garlic, minced

4 cups vegetable broth

1 cup coconut milk (or heavy cream for a richer flavor)

2 tablespoons olive oil

1 teaspoon ground thyme

1 teaspoon ground nutmeg

Salt and pepper, to taste

Fresh chives or parsley, for garnish

Instructions
 

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 5-7 minutes until it becomes translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Cook Cauliflower: Add the chopped cauliflower to the pot and stir to combine. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and simmer uncovered for about 15-20 minutes, or until the cauliflower is tender.

      Blend the Soup: Remove the pot from heat and let it cool slightly before blending. Use an immersion blender to purée the soup until smooth. If you don’t have an immersion blender, carefully transfer the mixture in batches to a standard blender, blending until smooth.

        Add Creaminess: Return the blended soup to the pot, add the coconut milk (or heavy cream), ground thyme, and ground nutmeg. Stir well to combine and heat gently over low heat. Season with salt and pepper to taste.
