2 cups penne pasta

1 lb (450g) boneless, skinless chicken breasts, diced

1 tablespoon Cajun seasoning

2 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 cup heavy cream

1 cup chicken broth

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 375°F (190°C) and grease a large baking dish (about 9x13 inches).

    Cook the pasta: In a large pot, bring salted water to a boil and add the penne pasta. Cook until al dente, according to package instructions. Drain and set aside.

      Sauté the chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken and sprinkle with Cajun seasoning. Cook until the chicken is golden and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

        Prepare the sauce: In the same skillet, add the chopped onion and red bell pepper. Sauté for about 5 minutes until the onion is translucent. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
