Creamy Avocado, Mozzarella, and Tomato Grilled Cheese

Ingredients
  

4 slices of artisan bread (sourdough or whole grain)

1 ripe avocado, mashed

8 ounces fresh mozzarella cheese, sliced

1 medium tomato, sliced (heirloom or vine-ripened preferred)

2 tablespoons pesto (store-bought or homemade)

4 tablespoons unsalted butter, softened

Salt and pepper to taste

Fresh basil leaves (optional, for garnish)

Instructions
 

Prepare the Avocado Spread: In a small bowl, mash the ripe avocado with a fork. Season it with a pinch of salt and pepper to taste, and mix in the pesto for added flavor. Set aside.

    Assemble the Sandwich: Take two slices of bread; on one side of each slice, spread about a tablespoon of the softened butter. Flip the slices over so the buttered side is facing down.

      Layer Ingredients: On the non-buttered side of one slice, spread a generous layer of the avocado mixture. Add slices of fresh mozzarella on top of the avocado, followed by the tomato slices. Season the tomatoes with a little more salt and pepper.

        Finish Assembly: Top with fresh basil leaves if using, and then place the second slice of bread on top, buttered side facing up.

          Grill the Sandwich: In a skillet over medium heat, carefully place the sandwich. Grill for about 3-4 minutes until the bottom is golden brown and the cheese starts to melt.

            Flip and Grill Again: Gently flip the sandwich using a spatula and grill the other side for an additional 3-4 minutes. If the bread browns too quickly, lower the heat.

              Serve: Once both sides are golden and the cheese has melted deliciously, remove the sandwich from the skillet. Allow it to cool for a minute, then cut it in half.

                Garnish and Enjoy: Optionally garnish with additional basil leaves, serve hot, and enjoy your creamy, cheesy delight!
