Crazy Good Casserole

Ingredients
  

1 lb (450g) ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 cup cooked rice (white or brown)

1 tsp chili powder

1 tsp cumin

1/2 tsp paprika

Salt and pepper, to taste

2 cups shredded cheddar cheese

1 cup sour cream

1/4 cup fresh cilantro, chopped (optional)

Tortilla chips, for topping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Meat: In a large skillet over medium heat, add the ground beef (or turkey). Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

      Sauté Onions and Garlic: Add the diced onion and minced garlic to the skillet with the meat. Sauté for an additional 3-4 minutes until the onion becomes translucent.

        Combine Ingredients: In a large mixing bowl, combine the cooked meat and onion mixture with black beans, corn, diced tomatoes, cooked rice, chili powder, cumin, paprika, salt, and pepper. Mix until well combined.

          Layer in a Casserole Dish: Spread half of the mixture evenly in a greased 9x13 inch casserole dish. Add dollops of half of the sour cream on top, followed by half of the shredded cheddar cheese.

            Repeat Layers: Add the remaining mixture on top, followed by the rest of the sour cream and cheese.

              Bake: Cover the casserole with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.

                Garnish and Serve: If desired, sprinkle chopped cilantro on top and serve with a side of tortilla chips. Enjoy your Crazy Good Casserole!
