Cranberry Orange Glazed Chicken

For the Chicken:

4 boneless, skinless chicken breasts

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

For the Glaze:

1 cup fresh or frozen cranberries

1/2 cup orange juice (freshly squeezed is best)

1/2 cup honey or maple syrup

1 tablespoon Dijon mustard

1 teaspoon ground cinnamon

Zest of 1 orange

Salt, to taste

For Garnish:

Fresh parsley, chopped (optional)

Orange slices (optional)

Instructions
 

Prepare the Chicken:

    - Preheat your oven to 400°F (200°C).

      - Pat the chicken breasts dry with paper towels. Rub them with olive oil, then season both sides with salt, pepper, garlic powder, onion powder, and thyme.

        Sear the Chicken:

          - In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the seasoned chicken breasts. Sear for about 5 minutes on each side, or until a nice golden color forms. Remove from heat.

            Make the Cranberry Orange Glaze:

              - In a small saucepan over medium heat, combine the cranberries, orange juice, honey (or maple syrup), Dijon mustard, ground cinnamon, and orange zest. Bring to a simmer and cook for about 10 minutes, or until the cranberries burst and the mixture thickens slightly. Stir occasionally.

                Glaze the Chicken:

                  - Pour the cranberry orange glaze over the seared chicken breasts in the skillet, ensuring the chicken is well-coated.

                    Bake:

                      - Transfer the skillet to the preheated oven. Bake for about 20-25 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F or 75°C). Baste once or twice with the glaze during cooking.
