Cranberry Feta Pinwheels

8 oz cream cheese, softened

1 cup crumbled feta cheese

1 cup dried cranberries, chopped

1/2 cup chopped fresh spinach or arugula

1 tsp honey

1/2 tsp garlic powder

1/2 tsp black pepper

4 large flour tortillas (whole wheat or spinach for added flavor)

Fresh parsley for garnish (optional)

Instructions
 

In a medium mixing bowl, combine the softened cream cheese, crumbled feta cheese, chopped dried cranberries, chopped spinach or arugula, honey, garlic powder, and black pepper. Mix until well combined and creamy.

    Lay a flour tortilla on a clean, flat surface. Spread an even layer of the cranberry feta mixture over the entire surface of the tortilla, leaving about a 1/2-inch border around the edges.

      Starting from one edge, carefully roll the tortilla tightly towards the opposite edge, ensuring that the filling stays inside.

        Once rolled, wrap the tortilla in plastic wrap and refrigerate for at least 30 minutes to set. This will make slicing easier.

          After chilling, remove the tortilla from the plastic wrap and place it on a cutting board. Using a sharp knife, slice the roll into 1-inch pinwheels.

            Arrange the pinwheels on a serving platter and garnish with fresh parsley if desired. Serve immediately or store in the refrigerator until ready to serve.
