8 slices of day-old bread (preferably sourdough or whole grain), cubed

8 large eggs

2 cups milk (whole or 2%)

1 cup sharp cheddar cheese, shredded

1 cup cooked breakfast sausage, crumbled (or diced ham or bacon)

1 small onion, finely chopped

1 bell pepper, diced (red or green)

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley or chives, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with cooking spray or olive oil.

    Sauté Vegetables: In a skillet over medium heat, add a splash of olive oil. Sauté the chopped onion and bell pepper until softened, about 5 minutes. Remove from heat and set aside.

      Combine Bread and Sausage: In a large mixing bowl, combine the cubed bread and crumbled breakfast sausage. Toss to mix evenly.

        Mix Egg Mixture: In another bowl, whisk together the eggs, milk, garlic powder, oregano, paprika, salt, and pepper until well combined.

          Layer the Casserole: In the greased baking dish, spread half of the bread and sausage mixture evenly across the bottom. Pour half of the egg mixture over this layer, then sprinkle half of the cheese. Add the sautéed vegetables on top, followed by the second half of the bread mixture, the remaining egg mixture, and finish with the rest of the cheese.

            Let it Soak: Cover the dish with plastic wrap and let it sit for at least 30 minutes (or refrigerate overnight) to allow the bread to soak up the egg mixture.

              Bake: Remove the plastic wrap and place the baking dish in the preheated oven. Bake for 45-50 minutes, or until the casserole is set in the middle and golden brown on top.

                Garnish and Serve: Let the casserole cool for a few minutes after coming out of the oven. Garnish with freshly chopped parsley or chives before slicing and serving.
