1 lb ground beef or turkey

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14 oz) diced tomatoes with green chilies

1 cup beef or vegetable broth

1 cup water

2 tsp chili powder

1 tsp cumin

1 tsp paprika

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Optional toppings: shredded cheese, sour cream, avocado slices, tortilla chips

Instructions
 

In a large pot, brown the ground beef (or turkey) over medium heat until fully cooked. Drain excess fat if needed.

    Add the chopped onion and minced garlic to the pot. Sauté for 3-4 minutes or until the onion is translucent.

      Stir in the black beans, kidney beans, corn, diced tomatoes (with juice), beef broth, and water into the pot.

        Season the mixture with chili powder, cumin, paprika, salt, and pepper. Mix well and bring the soup to a gentle boil.

          Reduce the heat to low and let the soup simmer uncovered for about 20-25 minutes, allowing the flavors to meld together.

            Adjust seasoning to taste and serve hot, garnished with fresh cilantro and optional toppings of your choice.
