Ingredients

1 pound chicken tenders

1/2 cup unsalted butter, softened

1 tablespoon minced garlic

1 tablespoon fresh parsley, chopped

1 tablespoon fresh chives, chopped

1 tablespoon smoked paprika

1 teaspoon cayenne pepper (adjust for spice level)

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1 tablespoon lemon juice

Salt and pepper to taste

1/2 cup all-purpose flour (for dredging)

2 large eggs (beaten)

1 cup breadcrumbs (panko for extra crunch)

Fresh parsley and lemon wedges for garnish

Instructions

Prep the Cowboy Butter: In a medium bowl, combine softened butter, minced garlic, parsley, chives, smoked paprika, cayenne pepper, Dijon mustard, Worcestershire sauce, lemon juice, salt, and pepper. Mix until well combined. Set aside.

Prepare the Chicken: Season the chicken tenders with salt and pepper. Create a dredging station by placing flour in one shallow dish, beaten eggs in another, and breadcrumbs in a third.

Dredge the Chicken: Coat each chicken tender in flour, shaking off excess, then dip into the beaten eggs, and finally coat with breadcrumbs, pressing gently to adhere.

Cook the Chicken: In a large skillet over medium heat, melt 2 tablespoons of Cowboy Butter. Once hot, add half of the chicken tenders in a single layer. Cook for about 4-5 minutes on each side, or until golden brown and cooked through. Repeat with remaining tenders, adding more butter as needed.

Serve it Up: Transfer the cooked chicken tenders to a serving platter. Drizzle the remaining Cowboy Butter over the top or serve it alongside as a dipping sauce. Garnish with fresh parsley and lemon wedges.

Enjoy: These flavorful and crispy Cowboy Butter Chicken Tenders are perfect served with fries, a fresh salad, or even on their own!
