Cottage Cheese Egg Bake

2 cups cottage cheese (low-fat or full-fat)

6 large eggs

1 cup spinach leaves, chopped (fresh or frozen)

1 bell pepper, diced (any color)

1 cup cherry tomatoes, halved

1/2 cup green onions, chopped

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional for heat)

Fresh herbs (parsley or basil) for garnish

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with cooking spray or olive oil.

    In a large mixing bowl, whisk together the cottage cheese and eggs until well combined. Make sure the mixture is smooth.

      Stir in the chopped spinach, diced bell pepper, halved cherry tomatoes, and green onions until evenly distributed.

        Add the garlic powder, onion powder, salt, pepper, and red pepper flakes (if using) to the egg mixture. Mix until well combined.

          Fold in half of the shredded cheese, reserving the other half for topping.

            Pour the mixture into the prepared baking dish, spreading it evenly with a spatula.

              Sprinkle the remaining shredded cheese on top of the egg mixture.

                Bake in the preheated oven for 30-35 minutes, or until the edges are golden and the center is set. A toothpick inserted in the center should come out clean.

                  Remove from the oven and let it cool for a few minutes. Garnish with fresh herbs before serving.
