2 cups cottage cheese

1 cup chopped spinach (fresh or frozen)

1 cup diced bell peppers (red, yellow, or green)

1 cup sliced mushrooms

1 cup cherry tomatoes, halved

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Salt and pepper, to taste

2 tablespoons olive oil

1 cup breadcrumbs (optional, for topping)

Fresh basil or parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for about 2-3 minutes until fragrant. Then, add the bell peppers and mushrooms. Cook for an additional 5 minutes until the vegetables are softened.

      Combine Veggies and Cottage Cheese: In a mixing bowl, combine the sautéed vegetables (including the spinach and cherry tomatoes) with the cottage cheese, oregano, basil, red pepper flakes, salt, and pepper. Mix well to ensure everything is evenly coated.

        Layer the Bake: Transfer the cottage cheese and veggie mixture into a greased 9x13 inch baking dish. Spread it out evenly, and sprinkle the shredded mozzarella cheese and grated Parmesan cheese on top.
