Cookies and Cream Cinnamon Rolls

For the Dough:

4 cups all-purpose flour

1/4 cup granulated sugar

1 packet (2 1/4 teaspoons) active dry yeast

1 teaspoon salt

1 cup whole milk, warmed

1/2 cup unsalted butter, melted

2 large eggs

For the Filling:

1/2 cup brown sugar, packed

2 teaspoons ground cinnamon

1/2 cup unsalted butter, softened

1 cup crushed chocolate sandwich cookies (like Oreos)

For the Cream Cheese Glaze:

4 oz cream cheese, softened

1/4 cup unsalted butter, softened

1 cup powdered sugar

1 teaspoon vanilla extract

2-3 tablespoons milk (to achieve desired consistency)

Instructions
 

Prepare the Dough:

    - In a large mixing bowl, combine the warm milk and sugar. Sprinkle the active dry yeast over the top and let it sit for about 5-10 minutes until frothy.

      - Once frothy, add the melted butter and eggs, mixing well.

        - Gradually add the flour and salt, stirring until a dough forms. Knead on a lightly floured surface for about 5-7 minutes until the dough is smooth and elastic.

          Let It Rise:

            - Place the dough in a greased bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm place until doubled in size, about 1-1.5 hours.

              Prepare the Filling:

                - In a small bowl, combine the brown sugar and ground cinnamon. Set aside.

                  Roll Out the Dough:

                    - After the dough has risen, punch it down and roll it out on a floured surface into a rectangle about 16x12 inches.

                      - Spread the softened butter over the dough evenly, then sprinkle the cinnamon-sugar mixture over the top.

                        - Evenly sprinkle the crushed chocolate sandwich cookies over the filling.

                          Roll and Slice:

                            - Starting from one long side, carefully roll the dough into a log shape. Pinch the seam to seal.

                                            - Add milk one tablespoon at a time until you reach your desired glaze consistency.
