Ingredients

2 ⅓ cups sweetened shredded coconut

2/3 cup sweetened condensed milk

1 teaspoon pure vanilla extract

2 large egg whites

1/4 teaspoon salt

1/2 cup semi-sweet chocolate chips (optional for drizzling)

A pinch of flaky sea salt (optional for garnish)

Instructions

Preheat the Oven: Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper for easy removal of the macaroons.

Mix the Dry Ingredients: In a large bowl, combine the sweetened shredded coconut and a pinch of salt.

Prepare the Wet Mixture: In a separate bowl, whisk together the sweetened condensed milk and vanilla extract until smooth.

Combine Mixtures: Pour the wet mixture into the bowl with the coconut. Stir well to combine, ensuring all of the coconut is coated with the mixture.

Whip the Egg Whites: In a clean, dry bowl, whip the egg whites with a whisk or mixer until they form soft peaks.

Fold Egg Whites: Gently fold the whipped egg whites into the coconut mixture, being careful not to deflate the egg whites too much. This adds lightness to the macaroons.

Form the Macaroons: Using a small cookie scoop or your hands, form small mounds (about 1 tablespoon each) of the mixture and place them on the prepared baking sheet, spacing them about 1 inch apart.

Bake: Bake in the preheated oven for 18-20 minutes or until golden brown on top.

Cool: Remove from the oven and allow the macaroons to cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool completely.

Chocolate Drizzle (Optional): If desired, melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth. Drizzle over the cooled macaroons and sprinkle with flaky sea salt if using.
