Coconut Lime Shrimp Skewers

1 lb large shrimp, peeled and deveined

1 can (13.5 oz) coconut milk

Zest and juice of 2 limes

2 tablespoons brown sugar

2 tablespoons fish sauce

1 teaspoon garlic powder

1 teaspoon ground ginger

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

1/4 cup fresh cilantro, chopped (for garnish)

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Instructions
 

Marinate the Shrimp: In a medium bowl, combine the coconut milk, lime zest, lime juice, brown sugar, fish sauce, garlic powder, ground ginger, red pepper flakes, salt, and pepper. Stir well to dissolve the sugar. Add the shrimp and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.

    Prepare the Skewers: If using wooden skewers, make sure they are fully soaked to prevent burning. Preheat your grill to medium-high heat (about 400°F or 200°C).

      Assemble the Skewers: Thread the marinated shrimp onto skewers, making sure to leave a little space between each shrimp for even cooking. Discard any remaining marinade.

        Grill the Skewers: Place the shrimp skewers on the grill. Cook for 2-3 minutes on each side or until the shrimp turn pink and opaque, being careful not to overcook, as shrimp can become rubbery.

          Serve: Remove from grill and arrange on a serving platter. Garnish with fresh cilantro and additional lime wedges for squeezing over the top if desired.
