1 lb large shrimp, peeled and deveined

1 tablespoon coconut oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 red bell pepper, sliced

1 cup coconut milk

2 tablespoons red curry paste (adjust to taste)

1 tablespoon fish sauce

1 tablespoon brown sugar

Juice of 1 lime

Salt and pepper to taste

Fresh cilantro for garnish

Cooked rice or quinoa, for serving

Sauté the Aromatics: In a large skillet, heat the coconut oil over medium heat. Add the chopped onion and cook until translucent, about 4 minutes. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.

    Add the Bell Pepper: Add the sliced red bell pepper to the skillet. Cook for 2-3 minutes until slightly softened.
