1 can (15 oz) chickpeas, drained and rinsed

1 can (14 oz) coconut milk

2 tablespoons coconut oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 tablespoon ginger, grated

1 bell pepper (red or yellow), diced

2 medium carrots, diced

1 cup diced tomatoes (fresh or canned)

1 tablespoon curry powder

1 teaspoon turmeric

1 teaspoon cumin

½ teaspoon red pepper flakes (adjust to taste)

1 cup vegetable broth

2 cups spinach leaves

Salt and pepper to taste

Fresh cilantro, chopped for garnish

Lime wedges for serving

Heat Coconut Oil: In a large pot, heat the coconut oil over medium heat.

    Sauté Aromatics: Add the chopped onion and sauté for 5 minutes until translucent. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.

      Cook Vegetables: Add the diced bell pepper and carrots to the pot, stirring well. Cook for about 4-5 minutes until the vegetables begin to soften.
