2 large eggs

1/2 cup panko breadcrumbs

2 tablespoons sugar (or to taste)

Pinch of salt

Butter or coconut oil (for frying)

Instructions
 

Prepare the Coconut Mixture: In a shallow bowl, whisk together the eggs, coconut milk, vanilla extract, cinnamon, sugar, and a pinch of salt until well combined.
