1 teaspoon salt

1/4 cup unsalted butter, cold and cubed

3/4 cup buttermilk, chilled

1 tablespoon honey (optional, for sweetness)

Preheat the Oven: Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper to prevent sticking.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Cut in the Butter: Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs. Be careful to leave some larger pieces of butter intact for extra flakiness.

        Incorporate Buttermilk: Make a well in the center of the mixture and pour in the chilled buttermilk and honey (if using). Gently stir with a wooden spoon or spatula until just combined. Do not overmix; a few lumps are completely fine.

          Shape the Dough: Turn the dough out onto a lightly floured surface. Knead it gently for about 30 seconds to bring it together. Pat the dough into a rectangle about 1-inch thick. Fold the dough in half, rotate it 90 degrees, and pat it down again. Repeat this process 2-3 times. This creates layers for flakiness.

            Cut the Biscuits: Using a floured biscuit cutter (or a glass), cut out the biscuits from the dough, pressing straight down without twisting. Gather any scraps and gently knead them together to cut out additional biscuits.
