Ingredients
  

2 cups fresh or frozen cherries, pitted

1 cup granulated sugar

1 tablespoon lemon juice

2 tablespoons cornstarch

1 cup water

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 tablespoons powdered sugar

1 teaspoon almond extract

1 cup crushed graham crackers (about 10 crackers)

1/2 cup unsalted butter, melted

1/4 teaspoon salt

Fresh mint leaves for garnish (optional)

Instructions
 

In a medium saucepan, combine the cherries, granulated sugar, and lemon juice. Cook over medium heat until the cherries start to release their juices, about 5 minutes.

    In a small bowl, mix the cornstarch with water until smooth. Gradually add this mixture to the cherry mixture, stirring continuously until it thickens (about 2-3 minutes). Remove from heat, stir in the vanilla extract, and let it cool to room temperature.

      In a mixing bowl, whip the heavy cream until soft peaks form. Add powdered sugar and almond extract, then continue to whip until stiff peaks form.

        In another bowl, combine the crushed graham crackers, melted butter, and salt. Mix well until the crumbs are evenly moistened.

          To assemble, layer half of the graham cracker mixture in the bottom of a serving dish. Pour half of the cherry filling over the crust, followed by half of the whipped cream. Repeat the layers with the remaining ingredients.

            Chill the dessert in the refrigerator for at least 2 hours to allow the flavors to meld together.

              When ready to serve, garnish with fresh mint leaves if desired.
