Ingredients

1 pound beef sirloin, sliced into thin strips

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

8 ounces mushrooms, sliced (button or cremini)

1 tablespoon all-purpose flour

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup sour cream

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cooked egg noodles or rice, for serving

Instructions

Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef in batches, cooking until browned on all sides (about 3-4 minutes). Remove the beef from the skillet and set aside.

Sauté the Vegetables: In the same skillet, add the chopped onion and sauté for about 3 minutes until translucent. Add the minced garlic and sliced mushrooms, cooking until the mushrooms release their moisture and are browned (about 5-7 minutes).

Make the Sauce: Sprinkle the flour over the mushroom mixture, stirring to coat. Cook for another minute, then gradually pour in the beef broth, stirring continuously to avoid lumps. Add Worcestershire sauce and Dijon mustard, and bring the mixture to a simmer.

Combine and Thicken: Reduce the heat to low, and return the browned beef to the skillet. Stir in the sour cream, mixing until smooth. Allow the stroganoff to simmer for an additional 5 minutes, stirring occasionally until it thickens. Season with salt and pepper to taste.

Serve: Serve the beef stroganoff over cooked egg noodles or rice, garnished with chopped parsley for added color and flavor.
