2 cups pecan halves

1 cup granulated sugar

1 tablespoon ground cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

1/4 teaspoon cayenne pepper (optional, for a little kick)

1 egg white (optional, for extra crunch)

Instructions
 

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.

    In a large mixing bowl, combine the sugar, cinnamon, salt, and cayenne pepper (if using). Mix well to ensure the spices are evenly distributed.

      In another bowl, whisk together the melted butter and vanilla extract until combined. If you’re using egg white for extra crunch, beat it slightly until slightly frothy and add it to the butter mixture.

        Add the pecan halves to the butter mixture and toss to coat them thoroughly.

          Once the pecans are well-coated, add them to the sugar and spice mixture. Toss until the pecans are evenly coated in the cinnamon sugar mix.

            Spread the coated pecans in a single layer on the prepared baking sheet.

              Bake in the preheated oven for 25-30 minutes, stirring every 10 minutes for even cooking, until they are golden and fragrant. Keep a close eye on them to avoid burning.

                Remove the baking sheet from the oven and let the pecans cool completely on the sheet. They will harden as they cool.

                  Once cooled, break apart any clumps and store them in an airtight container.
