6 cups day-old bread (such as brioche or challah), cut into 1-inch cubes

4 large eggs

1 cup whole milk

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 cup granulated sugar

1/4 cup brown sugar

1/2 teaspoon salt

1/4 cup unsalted butter, melted

For the cinnamon sugar topping:

1/4 cup granulated sugar

1 tablespoon ground cinnamon

2 tablespoons unsalted butter, melted (for brushing)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with cooking spray or butter.

    Prepare the Bread: Place the bread cubes in a large mixing bowl and set aside. Allow them to dry out slightly if they are not day-old.

      Make the Egg Mixture: In a separate bowl, whisk together the eggs, whole milk, vanilla extract, ground cinnamon, nutmeg, granulated sugar, brown sugar, and salt until well combined.
