Cinnamon Sugar Apple Cake

1 ½ cups granulated sugar, divided

3 large eggs

1 teaspoon vanilla extract

1 cup sour cream

3 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and diced

¼ cup brown sugar

½ teaspoon ground cinnamon (for topping)
