1 cup rolled oats (blended into flour)

1 scoop vanilla protein powder

1 ½ cups milk of choice (dairy or non-dairy)

2 large eggs

1 teaspoon vanilla extract

½ teaspoon ground cinnamon

1 tablespoon maple syrup (optional for sweetness)

A pinch of salt

For the Cinnamon Filling:

2 tablespoons coconut oil or unsalted butter (melted)

2 tablespoons brown sugar (or coconut sugar)

1 teaspoon ground cinnamon

1 tablespoon maple syrup

For the Cream Cheese Glaze:

4 ounces cream cheese (softened, or vegan cream cheese)

1 tablespoon milk of choice

1 tablespoon maple syrup

½ teaspoon vanilla extract

Make the Crepe Batter: In a large mixing bowl, combine blended oats, protein powder, milk, eggs, vanilla extract, ground cinnamon, maple syrup (if using), and a pinch of salt. Whisk until smooth. Allow the batter to sit for about 10 minutes to thicken.

    Prepare the Cinnamon Filling: In a small bowl, mix the melted coconut oil or butter, brown sugar, ground cinnamon, and maple syrup until smooth. Set aside.

      Cook the Crepes: Heat a non-stick skillet over medium heat and lightly grease it with a little oil or cooking spray. Pour about ¼ cup of the crepe batter into the pan, swirling it to cover the surface evenly. Cook for about 1-2 minutes until the edges begin to lift and the surface is set. Carefully flip and cook for another 30 seconds to 1 minute. Transfer to a plate and repeat with the remaining batter, stacking the crepes.

        Add the Filling: Once the crepes are cooked, spread a thin layer of the cinnamon filling on one half of each crepe. Fold the crepe in half, then in half again (creating a triangle) to encase the filling. Repeat with all crepes.

          Prepare the Cream Cheese Glaze: In a bowl, blend the softened cream cheese, milk, maple syrup, and vanilla extract until creamy and smooth.
