1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 tsp cinnamon

For the Cheesecake Filling

16 oz cream cheese, softened

¾ cup granulated sugar

¼ cup sour cream

2 large eggs

1 tsp vanilla extract

1 tsp cinnamon

For the Churro Coating

½ cup granulated sugar

1 tsp ground cinnamon

Preheat the Oven: Preheat your oven to 325°F (160°C). Line an 8x8-inch baking dish with parchment paper, allowing it to hang over the edges for easy removal later.

    Prepare the Crust: In a medium mixing bowl, combine the graham cracker crumbs, melted butter, ¼ cup sugar, and 1 tsp cinnamon. Stir until well combined. Press this mixture evenly into the bottom of the prepared baking dish.

      Bake the Crust: Bake the crust in the preheated oven for about 10 minutes, or until set and slightly golden. Remove from the oven and let it cool while you prepare the cheesecake filling.

        Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and ¾ cup sugar together with an electric mixer until smooth and creamy. Add the sour cream, eggs, vanilla extract, and 1 tsp cinnamon, mixing until fully combined and the mixture is fluffy.

          Assemble the Cheesecake Bars: Pour the cheesecake filling over the cooled crust, spreading it evenly.

            Bake the Cheesecake: Bake in the oven for 25-30 minutes, or until the edges are set but the center is still slightly jiggly. Turn off the oven and allow the cheesecake to cool inside for about 1 hour with the door slightly ajar to prevent cracking.

              Chill: After cooling, transfer the dish to the refrigerator for at least 3 hours or overnight to set completely.
