For the Cheesecake Layer:

16 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1/4 cup sour cream

For the Churro Cookie Layer:

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/2 teaspoon vanilla extract

1 large egg

1 3/4 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1 tablespoon ground cinnamon

For the Cinnamon Sugar Topping:

1/4 cup granulated sugar

1 tablespoon ground cinnamon

1/4 cup unsalted butter, melted (for brushing)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan and line it with parchment paper, leaving some overhang for easy removal later.

    Prepare the Cheesecake Layer:

      - In a large mixing bowl, beat the softened cream cheese with granulated sugar until smooth and creamy.

        - Add in the vanilla extract and mix well.

          - Incorporate the eggs one at a time, mixing well after each addition. Finally, stir in the sour cream until fully combined.

            - Set aside.

              Make the Churro Cookie Layer:

                - In another bowl, cream together the softened butter and sugar until light and fluffy.

                  - Mix in the vanilla extract and then the egg until fully incorporated.

                    - In a separate bowl, whisk together the flour, baking powder, salt, and ground cinnamon.

                      - Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

                        Assemble the Bars:

                          - Press half of the churro cookie dough into the bottom of the prepared baking pan, forming an even layer.

                            - Pour the cheesecake mixture over the cookie layer, spreading it evenly.

                              - Crumble the remaining churro cookie dough over the top of the cheesecake filling.

                                Bake: Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center has a slight jiggle. Allow to cool completely in the pan.

                                  Add Cinnamon Sugar Topping:

                                    - In a small bowl, mix together the granulated sugar and ground cinnamon.

                                      - Once the bars are cool, brush the melted butter over the top, then sprinkle the cinnamon sugar mixture evenly over everything.
