Ingredients

1 cup semi-sweet chocolate chips

1/2 cup unsalted butter

3/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup all-purpose flour

1/4 cup cocoa powder

1/4 teaspoon salt

1/2 teaspoon baking powder

1/2 cup chocolate ganache (1/4 cup heavy cream + 1/2 cup semi-sweet chocolate chips, melted together)

Optional: powdered sugar for dusting

Instructions

Prepare the Ganache: In a small saucepan over low heat, combine 1/4 cup heavy cream and 1/2 cup semi-sweet chocolate chips. Stir until the chocolate is completely melted and smooth. Allow to cool slightly before use.

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

Melt the Chocolate and Butter: In a heatproof bowl, combine 1 cup of semi-sweet chocolate chips and 1/2 cup of unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.

Mix the Wet Ingredients: In a mixing bowl, add the melted chocolate and butter mixture. Stir in 3/4 cup of granulated sugar. Add the eggs one at a time, mixing well after each addition. Add 1 teaspoon of vanilla extract and mix until combined.

Combine Dry Ingredients: In another bowl, whisk together 1/2 cup all-purpose flour, 1/4 cup cocoa powder, 1/4 teaspoon salt, and 1/2 teaspoon baking powder until well blended.

Combine Wet and Dry Mixtures: Gradually fold the dry ingredients into the wet ingredients, being careful not to overmix; the dough should be thick and fudgy.

Assemble the Cookies: Using a cookie scoop or tablespoons, drop a spoonful of batter onto the prepared baking sheet. Make a small indentation in the center of each cookie, then add a teaspoon of chocolate ganache. Top with another spoonful of cookie batter to cover the ganache completely.

Bake: Bake the cookies in the preheated oven for about 12-14 minutes. The edges should be set, but the centers will still be soft.

Cool Down: Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Optional Decoration: Once cooled, dust with powdered sugar for a decorative touch.
